Pour 75g of rice per person into a sieve and give it a thorough rinse under cold running water. A large pan of water should have a pinch of salt added before boiling. Regain the boil after adding the rice. Once you’ve stirred, lower the heat, cover the pan, and simmer the rice for 15 minutes, or until it’s cooked. Strain in a sieve, thoroughly rinse with hot water, and then serve.
