Description
The entire fish, including the skin, head, and tail, is eaten. The flesh has a moderate flavour, is delicate, and is a bit oily. The most common method is to fry them, either with a batter or just a little dusting of flour. Due to their short shelf life, smelt are usually sold frozen.
